These ultra chocolatey crazy gooey double chocolate chunk cookies are crazy delicate. They’re like these beautiful pyramid-shaped delicate clusters of salt that offer the perfect amount of saltiness and just look super chic on your baked goods. Any coarse sea salt to top them off would work here, although I also highly recommend Maldon finishing salt. Chips are made to maintain their shape as they bake, so they don’t have a total meltdown like bar chocolate. Sure, you could use chips, but don’t expect those insane chocolate pools. I highly, highly recommend that you chop up a thick chocolate bar (Baker’s brand) to melt beautifully through the cookies. But for now, I just want to eat and cook what makes me happy. My diet is taking a comfortable backseat right now, and I’ll see her again soon. Getting my hands dirty in doughs, watching the clock to track rising times, gardening…it’s all making me happy during this dark time. Admittedly, the only thing that’s keeping me sane right now is baking. It’s scary, and the uncertainty is giving a lot of people anxiety they’ve never experienced before. Trust me when I say you want to salt these, just to help bring out how intensely chocolatey they are. It’s insane! You’ll need all the almond or oat milk possible to wash all of these down. Super fudgy and ultra gooey chocolate cookies with melted pools of semi-sweet chocolate strewn through the molten dough. You guys have to make these death by chocolate chunk cookies, like, right now.
